How I Meal Plan

There is a lot of thought and planning that goes into what we eat each night. I work hard to make sure that food and money isn't being wasted. Bobby and I used to order in a lot Thursday-Friday, but now our priorities for going out to dinner have been swapped with activities that we want to do with our family.

Step 1: Look at the calendar. Look at nights that you have events after school, someone is working late or out of town, etc. Also I also think about how much work I want to put into each meal on a specific day. Last week, I shared that by Thursday I am tired so because of that I always schedule something easy to dump into a Crock Pot or Instant Pot. 

Step 2: Clean out your fridge. Throw away old food. Put leftovers in the freezer. This is a really important step for me. Wasted food means wasted money. By having a clean fridge, I know exactly what I have when I am shopping and what ingredients need to be used first. 

Step 3: Check out what you have lurking in your fridge. Sometimes I have ingredients leftover from other meals or we have ingredients from a skipped meal. I hate throwing away a bag of spinach or a full box of cherry tomatoes. I use what I have to start off my meal plans or by making something that can be put in the freezer for a later date. 

Step 4: What do I want to eat and what do my kids need to eat. We're in a really picky stage of eating for our kids, so I think about what they like and how to combine it with what I like. Typically, they eat a deconstructed version of what I eat. Rice Bowls also are great solution for meeting everyone's needs. 

Step 5: Make my grocery list and shop. Stick to your list, don't get tempted by something you see. 

Step 6: Put your daily dinners everywhere- Google Calendar, Planner, Family Calendar. Here's why. If you see it all the time, it's part of the schedule. You can't talk yourself out of it and order dinner out instead.

Meal Planning Monday: September 29th


It's getting cool in Chicago, so I want to eat all of the noodle casseroles. So, I'm going to do 70% salad and 30% noodle goodness dinners for myself. Plus, my kids are loving noodles right now and I love not arguing. I've also written a quick post about the steps I take each Saturday/Sunday when I am meal planning. 

I'm making a couple of extra dishes to put in my freezer and lunches because I found some leftover ingredients lurking in the fridge.

Fun Free Friday: Home Depot's Kids Classes

I'm giving you a week to get this on your calendar. Stop what you are doing right now and find out where the closest Home Depot is to you. Did you know Home Depot does kids' workshops on the first Saturday of the month for FREE? I'm here to tell you that it incredibly fun and engaging for kids and parents.


On October 5th, you can go to any Home Depot and build Fire Planes. I'm going to be real with you for a second and tell you that I have absolutely no clue what a fire plane is, but I know Bo is going to like building it and playing with it afterwards.

Just in case you are worried, you don't need to have any handy or crafty skills. Home Depot gives you all of the tools plus instructions to build these projects.


We've gone a couple of times and have thoroughly enjoyed ourselves each time. We've made bird houses, bean bag toss games, bug catchers, a clock, plus other projects I can't think of. It's a great way to spend a Saturday morning while drinking a coffee. Afterwards we always walk around Home Depot looking at the kitchens and carpets while saying to ourselves "What did we need at Home Depot again?".

A couple of Pro-Tips:
  • Paint your project at home
  • When you "paint" at home, use markers
  • Don't paint at Home Depot
  • Don't paint at all

Small Self Care Secrets

Thursday is the day that I have the least motivation to be productive. I don't want to work out, I don't want to drink water, I want to eat fast food and lay in bed.  The wear of the week has definitely set in by today. Before I used to dread Thursdays and I would get in a bad mood that would affect all around me. Because that is no fun for anyone. I've put in a couple of small self care secrets to help me get through the day. Now, Thursday is one of my favorites.

You might have a different day of the week that is hard, just find out how to make that day the best day of the week.

  1. Dinner: On Thursdays, I plan for the EASIEST dinner ever. I have no motivation to cut and saute anything on Thursdays.It is usually a crock pot or freezer dinner.  I also choose a favorite meal for this day as well. Something that everyone generally enjoys so we don't have to argue too much. Tonight, we're having the Quinoa Enchilada Bake. I mean who doesn't like cheese and sour cream? Makes me deliriously happy. 
  2. Date Night: Each Thursday Night, Bobby and I have date night. Our date nights happen right at home. We switch on and off planning the activities and cocktails. We sometimes play card games or just talk and sip a new (or old favorite) cocktail spending the night together. 
  3. Small To-Do List: My To-Do list on Thursdays are less items on it. When I was teaching, I did all of my copying and planning on other days of the week and kept Thursday to putter around my classroom and tidying. I do the same while I'm working at home. On Thursdays, I'm puttering around my house and working on smaller projects. 
  4. Watch my Favorite Shows: I hold my favorite shows until Thursdays. Working at home, I watch a lot of TV and listen to a lot of audio books. I keep my favorite shows for Thursday so that I have something enjoyable to listen to while I work. 
  5. Favorite Outfits: I  used to pick out my entire week of outfits on Sundays. I always chose my favorite and most comfortable outfits for Thursdays. When you look good, you do good. 
Nobody likes to feel tired and worn down. Think about those little things that you can do throughout the day to make the day the best that it can be. Maybe you schedule phone calls with your best friend or pick up coffee before work. You are in control of how you feel each day. You have a choice to be your very best self and meet each day with a positive attitude. Sometimes we need to put something in place that will ensure this day is not wasted with a bad attitude. (Typing this as a reminder for myself.) This mom, dad, parent, friend, wife, husband life is tough. Remembering to take time for yourself is even tougher. Put a little love and enjoyment in today for you.

Meal Planning Monday Week of 9/22


It's a new busy week and I'm pulling from my pantry and freezer to make some of our favorite dinners. I also realized that I made a portion of Chicken Spaghetti without Chicken 🙅 so I'm going to make some Chicken Corn Chowder (without the milk and cheese) to put in the freezer. This is one of our favorite recipes to put in the crock pot all day. 

Also,  I made Tomato Soup last night. It's called the Best Tomato Soup recipe. I think Elliott is letting you know how she felt about it. We had a ton left over so that went in the freezer. I can't wait for the day that meal planning is all Find it in the Freezer!

Go Noodle

Image result for gonoodleDo you GoNoodle? Do you know what GoNoodle is? If you are a teacher or have school age kids, you've maybe heard of it. It's a program that gets your kids moving and grooving when they need it the most. There is Yoga, Mindfulness, Zumba, Dance Videos, and much more.

Bo is obsessed. It has replaced all of the Paw Patrol watching after school. My child is sitting doing mindfulness and yoga after school because (his words) "Momma, I have not moved my body all day!". The best parts about GoNoodle are that it is a free service plus there are apps for TVs and Tablets.

Since it's getting close to being colder in Chicago, I'm always thinking of new ways to get my kids moving and getting energy out while not just watching TV. It's the perfect combination of TV that our kids want and movement that we want.

I've been able to tell a large difference in Bo's calmness and ability to listen at night 🙏 on days that he does GoNoodle. His brain seems so much more clear and ready to participate in whatever we ask him to do.

There are so many great throwback videos that you will love too. Who knows- maybe you'll work up a little sweat too? Overall it's a win!
